Private Cooking Classes

private cooking classes offer you the opportunity to learn from a personal chef in the privacy of your own home. We will personally shop and source out the best ingredients for the particular class that you select. We will bring everything to you and provide a structured educational hands on class. After cooking your meal, you and your guest will enjoy what you have mastered. Classes are held in your own personal kitchen for a minimum of 8 people. Classes are typically 2 hours long and workshops run 3-4 hours. Classes can be paired with wine for an additional cost.  Our menu features dishes that are personally prepared from fresh, local, seasonal & organic ingredients. Our food is heavily influenced by traditional & regional cooking throughout Italy with Mediterranean & California inspirations.

In addition to cost per person, there is a $200 set up fee for set up, break down & cleaning. Taxes, gratuity & staffing are all charged separately.

Sanitation & Safety, knife-skills, making stock, soups, sauces, browning and braising of meats & vegetables as well as roasting. Menu planning & recipes. Garnishes & platting. Menu to be determined

The art & history of handmade pasta dough, regional specialties, hand-cut Tagliatelle, Fettuccine, Capellini, & Pappardelle pasta.  Storing, cooking & typical sauces. Classic Roman Amatriciana sauce prepared & served with handmade Fettuccine.

The making of homemade fresh Lasagna. The preparation of making fresh lasagna sheets, classic simple tomato sauce & the production of hand-made lemon ricotta cheese. Assemble, cook and serve.

Making of meatballs, creamy polenta & classic tomato sauce. Homemade biscotti. Prepare, cook & serve

BRAISING & ROASTING $105 per person/wine pairing $125 per person

Learn the proper way to brown, braise & roast meats & vegetables. Menu to be determined

No-knead bread, variations: rustic Italian, olive rosemary, roasted garlic, apricot & pecan.  Preferments & working with Sourdough starters. Homemade Sourdough Focaccia with sea salt & rosemary.  Baking 101.  Healthy lunch prepared & served.

GNOCCHI $120 per person/wine pairing $140 per person

Learn how to make gnocchi by hand and prepare a classic Bolognese sauce. Preparation, proper storing, cooking and serving.

SOUPS $105 per person/$125 per person

learn the basics of making a proper soup. Stock vs broths. Italian soups; Papa al Pomodoro, Tuscan soup, classic Wedding Soup & roasted butternut squash.  Preparation of all soups & tasting.

FARMERS MARKET $175 per person/wine pairing $195 per person

Start your morning at the Farmers market, learn about local vendors, what to buy and how to become a CSA member.  Meet back at selected destination. Cleaning & storing vegetables. Menu planning for the week. Prepare a seasonal, local & organic lunch.
